The Hitec HS-318 servo is a 25 tooth version of the HS-311. This servo provides the reliability Hitec is known for, without the price tag the high end models carry. As with the HS-311, The HS-318 is a great option for entry level flyers and RC vehicles. The nylon gears have great wear characteristics and provide tight tolerances for a zero backlash geartrain.
The answer to this question is partially dependent on what you are using to control the servo.

With an Average Radio System:
85°
Your average transmitter and receiver will output a relativly narrow PWM signal range.
Radio System + Travel Tuner:
210°
Adding a Servo Travel Tuner to your radio system setup will allow you to achieve wide PWM signal ranges.
Wide Signal Controllers:
210°
Controllers such as the Servo Commander, Arduinos, and Raspberry Pi servo hats can usually send a wide signal.
